Wheat Apple Mango Coffee Cake

cups of whole wheat flour
2
cups of sugar
1
½ teaspoon of baking soda
½
teaspoon of nutmeg
1
cup of milk mixed with 1 tablespoon of lemon juice.
½
cup of butter
2
eggs
1
teaspoon of vanilla flavor
2
cups of crushed peeled mango
1
cup of crushed peeled apples
½
tablespoon of cinnamon
3
tablespoons of sugar

teaspoon of salt

Preheat your oven to 350˚F
ä
Put the lemon juice in a the milk and let it sit while
you mix the other ingredients
ä
Grease a baking dish that is 13x9x2in.
ä
In a large mixing bowl combine the whole wheat flour,
sugar, baking powder, nutmeg and the salt
ä
Add the butter into the flour mixture and blend it until
it resembles course crumbles
ä
In a different bowl combine the eggs, milk with the
lemon juice in it and the vanilla flavor
ä
Pour the egg, lemon, vanilla mixture into the flour
mixture and stir until everything is just moistened
ä
Add the mangoes and stir until mixed
ä
Pour the cake mix into the greased pan and sprinkle
with cinnamon and some sugar
ä
Bake for 40 to 50 minutes
ä
Cool for 15 minutes and serve it with your favorite
ice cream or with whipped cream on top
